TIGERNUT MILK (KUNU AYA)


Tiger nut milk is one of the tastiest and most delicious drink that is made in Nigeria. The very healthy kunnu aya is made from tigernuts (aki Hausa in Igbo, aya in Hausa and ofio in Yoruba). To spice it up, you can include dates, garlic or ginger.

Ingredients
  • 7 cups Tiger Nuts
  • 3 cups dry Dates
  • 1 whole Coconut
  • 3 teaspoons Vanilla Essence
Equipment
  • Smart Blender
  • Bowl
Notes:
  1. If the tigernuts are dried you need to soak it in clean water for 36 hours before your blender would attempt blending it.
  2. You will need a juice maker or really smart blender, otherwise, it will not be able to blend it. You could attempt using a hand grinding machine alternatively
  3. Crack the dates to remove the seeds.
  4. You can blend in batches if you are using a blender
Preparation
  1. Wash Tiger nuts to completely remove all dirt.
  2. Wash and deseed the dates.
  3. Break and carve out the coconut flesh.
  4. Grind Tigernut, dates and coconut with 3 60 cl bottles of water.
  5. Sieve first with a sieve that has large holes, then sieve again with a sieve that has smaller holes
  6. To make the milk very fine and smooth, pass it through a muslin cloth.
  7. You can add pieces of chopped dates and roasted coconut flakes to the drink.
Chill the drink and enjoy.
