Miyan Taushe is a stew/soup of Northern origins. It
is commonly taken by the Hausas and Fulanis of Northern Nigeria.
It is made out of fluted pumpkins. Did you know that
fluted pumpkins also give us another common traditional soup? Alot of Nigerians use fluted pumpkin leaves
(Ugu) to make their soup almost everyday however, only a few of them use the
pumpkin fruit also.
Ingredients
- 1 cow leg Cut into pieces
- ½ Kg beef cut into cubes
- 4 Cups pumpkin cubed
- 5 Cups Tomato and pepper(mixed) blended
- 1 large onion sliced
- 1 cooking spoon palm oil
- 3 cooking spoons vegetable oil
- 1 Tablespoon ground ginger
- 1 Teaspoon daddawa/iru(optional)
- 3 tablespoons Ground groundnut
- 3 Seasoning cubes
- Miya spice

Instructions
- Put cow leg in a large pot. Cover with water, add salt to taste and cook till done.
- In another pot, add beef, seasoning cubes, salt, and boil until almost done, then add pumpkins and cook till soft.
- Boil blended tomato until thick.
- Heat palm oil and vegetable oil in a pot, add onions, and fry for 1 minute. Pour in tomatoes and fry. Add ground ginger.
- Pour in cooked cow leg and beef, with pumpkins. Add Signature miya spice.
- Stir well and allow to boil, breaking pumpkins with spoon.
- Add ground groundnuts. Cover pot and cook until thick.
- Add spinach
- Season to taste, and serve with tuwon shinkafa.
