NIGERIAN COCONUT RICE RECIPE

Nigerian coconut rice is easy to prepare and can be served on its own or as part of a main course. Ingredients 3 cups rice (long grain or basmati rice) 1 tbspn Coconut oil One 400ml can coconut milk 1.5 cups water 1 medium onion 2-3 medium tomatoes Spices: 2 bay leaves 1 tspn white pepper 1 tspn minced chili 4 sprigs fresh thyme (or 1 tspn dried) salt – to taste 2 heaped tbspns crayfish powder 1-2 stock cubes. Cooking Instructions Finely chop onion – set aside cut tomatoes into large chunks – set aside. Mince chili pepper – set aside . Place a wide cooking pot on medium heat. Add in 1 tbsp of coconut oil (sub vegetable oil). Add in onion. Cook until translucent and fragrant . Add in tomato, minced pepper and spices. Stir. Cover and leave to simmer on low-medium heat for 10 minutes . Add in coconut milk and one and a half (1.5) cups of water into the tomato mix. Stir. Cover and bring to a rolling boil. Stir. ASUN : SPICY BARBECUED GOAT MEAT

Asun is a Yoruba delicacy that you will always see in the Small Chops section at every Yoruba party. It is simply grilled/barbecued goat meat with lots of pepper. Asun is typically made with Smoked Goat Meat, but you can settle for raw goat meat if you can’t lay your hands on smoked goat meat. Asun is also made using just Scotch Bonnet peppers (Atarodo), and that is really hot. If you can’t handle the heat add sweet bell pepper (Tatasshe). Ingredients: 1kg Cooked and Grilled Goat meat Scotch Bonnet (Atarodo) as much as you can tolerate Green and Bell Peppers (Optional) 2 Large Onions 2 Chicken flavor seasoning Cubes Salt to Taste Cooking Instructions Blend coarsely or chop the Peppers you’ll be using, including an onion. Set aside. Chop the Grilled Goat meat into bitesize chunks. Set a Wok or Skillet on medium heat. Add the Vegetable oil. When it’s hot, add the coarsely chopped peppers and Onions and Saute. RIVERS NATIVE SOUP (Fisherman Soup)

Rivers Native Soup is a gift from the people of Rivers State in the Niger Delta Area of Nigeria. These are the riverine people that use the freshest seafood to prepare expensive soups and meals. But you do not have to break a bank to prepare this soup if you are not a fisherman. You can cut down on some of the ingredients but whatever you do, make sure you add clams because it adds a lot of flavour to this soup. Ingredients 3 medium fresh fish 9 snails 2 cups clams 1 cup sea snails ½ cup periwinkles 1 cup shrimps 6 medium cocoyams 1 tablespoon uziza seeds (false cubeb) 1-2 yellow habanero peppers 2 big stock cubes Bitter leaves (washed) 5 Uziza leaves (false kubeb) 2 cooking spoons (¼ cup) red palm oil Notes on the recipe and ingredients You should use only fresh seafood when preparing Rivers Native Soup.
